Modern Farm to Table Cuisine
Nathalie T. - April 3, 2025
Makris Athens is a wonderful Michelin-starred restaurant nestled in the historic Thisio neighborhood, at the foot of the iconic Acropolis. At its helm is the visionary Chef Patron Petros Dimas, whose culinary artistry delights guests with beautiful seasonal dishes crafted from exceptional ingredients. These are sourced either from the restaurant's own Organic Farm in the foothills of Corinth or from carefully selected local producers.
From the moment you arrive, you are drawn into the restaurant's enchanting atmosphere and striking décor—a harmonious blend of Greece's rich historical heritage and contemporary aesthetics. Housed in a historic building that once served as the nation's first inn, Makris’ thoughtful design elements pay homage to Athens' timeless charm. From fragments of jars suspended from the ceiling to miniature olive trees adorning each table, and a glass floor revealing ancient artifacts, every detail evokes a sense of wonder.
Before establishing Makris Athens, Chef Petros Dimas honed his craft in prestigious kitchens around the world, including London’s renowned Aquavit and Pollen Street Social, as well as at acclaimed establishments in Athens such as Hytra and Varoulko. Under his leadership, Makris Athens impressively earned its first Michelin star within just 15 months of opening. Chef Dimas also oversees three additional Makris restaurants in Corfu, Crete, and Milos, all proudly part of the prestigious Domes Resorts group.
Chef's Welcome / Amuses-Bouche
At Makris Athens, Chef Petros Dimas showcases his culinary art through three exceptional tasting menus: the 9-course Genesis, the 11-course Utopia, and the 9-course vegan Physis Vegan. Each menu reflects his unwavering commitment to the Farm-to-Table philosophy, focusing on exceptional seasonal local ingredients and celebrating their natural beauty. When he’s not in the kitchen, he can be found at the restaurant’s organic farm, personally selecting the vegetables, herbs, and edible flowers that inspire his creative process. Because Chef Dimas also believes in the indissoluble bond between Nature and Gastronomy, sustainability is a key part of restaurant Makris' philosophy. From zero-waste practices and recycling initiatives to the exclusive use of eco-friendly products, both the restaurant and its farm are committed to leaving a positive footprint.

During our recent visit, we indulged in the Genesis menu, a true feast for both the eyes and the palate. Each dish was beautiful, creative, and exquisite, perfectly balancing flavors, aromas, and textures. The menu went like this:
Beyond Chef Dimas' exceptional cuisine and the stunning décor, we loved the restaurant’s casual-chic atmosphere, the impeccable and warm service, and the meticulously curated wine list, featuring a remarkable selection of Greek and international labels. That evening, our beautiful experience at Makris restaurant felt like an ode to Greece itself. Greece is indeed omnipresent: in the stunning décor of this historic building, the heartfelt hospitality of the team, and on every plate, where each dish serves as a tribute to its cultural heritage, its bountiful land, and culinary treasures.
