​​​​​​On March 31, 2025, during a celebratory ceremony held in the city of Metz, the Michelin Guide unveiled its highly anticipated 2025 star ratings for France. This year’s selection features an impressive total of 654 Michelin-starred restaurants!
 
68 restaurants have been newly promoted in this 2025 edition, including two new Three-Star establishments, nine new Two-Star restaurants, and 57 new One-Star recipients.
This year, more than ever, the Michelin Guide celebrates the richness, diversity, and dynamism of French gastronomy. As always, the selection honors not only the iconic culinary institutions located in France’s major cities but also hidden gems in small villages and towns. For example,restaurant La Bòria in the village of Veyras in Ardèche, and restaurant La Cheneaudière-Le Feuillage located in the small village of Colroy-la-Roche in Bas-Rhin, are among the new stars of French gastronomy.
 
True to the trend that has prevailed in recent years, the 2025 edition places the spotlight on chefs who are committed to sustainable cuisine, passionate opponents of waste, and advocates for seasonal and locally sourced ingredients.
This dedication to sustainability is exemplified by the two new entrants in the prestigious category of Three-Star restaurants: Le Coquillage by Hugo Roellinger in Cancale and the Christopher Coutanceau restaurant in La Rochelle. Both establishments champion sustainable fishing and embrace a zero-waste philosophy, creating dishes that are not only an ode to the Ocean but also a celebration of Nature as a whole.

The first Michelin Guide was published in 1900 by Édouard and André Michelin to provide motorists with information about where they could have their car serviced or repaired as well as where to find a good place to dine. The star-rating system was first introduced in 1926 as a way to award outstanding restaurants for their excellence in cuisine and hospitality.
The Michelin inspectors are anonymous, they pay their bill and dine and drink as every other customer.
