Ingredients 3 lb skinless chicken breast 5 tsp dried thyme 2 tsp cumin 1 tsp ground turmeric Juice of 1 lemon 2 tbsp olive oil 2 garlic cloves 12 oz celery 1 onion diced 12 oz cherry tomatoes 2 tbsp honey
Preheat the oven to 400 degrees F. Chop the celery into cubes. Season with salt and pepper, add the onion, mix everything together and layer it in a baking dish.
Mix the thyme, the juice of 1 lemon, diced garlic, cumin, turmeric, olive oil and honey together. Add the chicken to the mixture and coat well. Place the chicken on the celery in the baking dish. Add the remaining mixture. Place the whole cherry tomatoes around the chicken.
Cover the dish with aluminum foil, place it into the oven and bake for 1 hour. Remove the aluminum foil and bake another 30 minutes.
