Ingredients 7 oz sliced smoked salmon 17 oz fresh salmon fillets skinned 1 tbsp fresh chives finely chopped 1 lemon (juice + zest) 1 tbsp olive oil 2fl. oz heavy cream 2 oz caviar Ground black pepper
Finely chop the smoked salmon and put it in a bowl. Cut the salmon fillets into cubes and add them to the bowl. Add the lemon juice, zest, olive oil and chives, and mix together using two spoons. Season with pepper. Do not add salt as the smoked salmon is usually salty enough for the whole preparation. Cover the bowl with plastic wrap and put it in the refrigerator for at least 30 minutes. Beat the heavy cream in a bowl, using an electric whisk until the cream stands in stiff peaks.
Just before serving, set up the plates directly using a round cookie cutter (approx. 3”), starting with a layer of salmon tartare. Add 1 tsp whipped cream on top of each individual salmon tartare. Gently place a small amount of caviar on top of the cream.
