Nicolas Thoni is a French-Italian Mixologist and Restaurant Manager who grew up near Paris, France.
I first met him and his partners Chef Andrea Calstier and Elena Oliver during a wonderful dinner at Papilles, an intimate fine dining restaurant where he helms the beverage program. I was amazed by both the meticulously thought out wine list and his magnificent cocktail creations using fresh herbs, spices, and flowers. I reached out to him a few days ago and he kindly accepted to share one of his secret cocktail recipes. He chose The Botanist, one of his favorite creations, which flavors and scents transport us to a blooming botanical garden. A perfect cocktail recipe for your next Happy Hour at Home! |

Ingredients:
1.5oz Sake
1/2oz Yuzu Liquor *
1/2oz Elderflower Liquor *
1/2oz Pomegranate Juice
1/2oz Aquafaba
1 Dash Orange Bitter
1 Dash Lavender Bitter *
Rose Petal Infusion *
Ice
Pour the aquafaba in the shaker and give it a good shake.
Add all the other ingredients in the shaker with ice except the rose petal infusion.
Shake well and pour in a coupe glass.
Spray with a hint of the rose petal infusion on top and decorate with flower petals.
