Nicolas Thoni is a French-Italian Mixologist and Restaurant Manager who grew up near Paris, France.
I first met him and his partners Chef Andrea Calstier and Elena Oliver during a wonderful dinner at Papilles, an intimate fine dining restaurant where he helms the beverage program. I was amazed by both the meticulously thought out wine list and his magnificent cocktail creations using fresh herbs, spices, and flowers. I reached out to him a few days ago and he kindly accepted to share one of his secret cocktail recipes.
