Ingredients 8 oz mascarpone 2.8 oz sugar 3 eggs 2 tsp vanilla bean paste 6 ladyfingers 4 tsp green matcha tea powder 1 tbsp rum (optional, 21 or older) 4 fl oz water 1 tbsp sugar 16 oz strawberries
Wash the strawberries and slice them in half. Beat the egg yolks and 2.8 oz sugar in a bowl until they become pale and thick. Add the mascarpone and vanilla and mix until well combined. In a separate bowl, beat the egg whites until they form stiff peaks with an electric mixer. Gently fold them into the mascarpone mixture.
To prepare the matcha tea bath: Put the water in a small bowl. Add the rum, 3 tsp of matcha tea powder, 1 tbsp of sugar and whisk until well combined.
To assemble the individual tiramisus: Cut 1 ladyfinger in half, soak briefly in the matcha bath and put at the bottom of the cup. Cover the sides of a clear cup with halved strawberries and spread mascarpone cream at the center all the way to the top. Dust with matcha tea and place in the fridge for at least 6 hours. Repeat with the other cups.
