Finely chop the onion and garlic. Heat the olive oil in a frying pan and add the onion. When the onion is soft, add the garlic and cook for one minute. Chop the peppers into cubes and add them to the pan. Season with salt and cook for 5 minutes. Chop the zucchinis and eggplant into cubes and add them to the pan without removing the peppers. Cook for 10-15 minutes until the vegetables are soft. Chop the tomatoes and add them to the pan with the other vegetables. Season with salt and pepper. Add the thyme and bay leaves. Cook until tomatoes are almost dry (approx.. 30 minutes).
